There is nothing unhealthy about canned fruits and vegetables.
To get the most nutrients from fruits and vegetables, eat them raw.
Since that s not always possible (Raw sweet potato, anyone?) we cook them and sometimes can them, for preservation.
Some folks believe that all of the nutrients have somehow leaked out, or been sucked
out of canned fruits and vegetables.
That s just not true. Other than water soluble vitamins C and B, and some minerals, all
of the other nutrients found in the veggies stay intact when they are canned.
Canned vegetables lose fiber, because they are peeled, and often get packed in simple
syrup, but they still provide nutrition.
The loss of Vitamin C in canned vegetables isn t a big deal.
There are tons of packaged food items claiming to be high in vitamin C, because they
use ascorbic acid as a preservative or to add acidic bite to the flavor of the product.
You could live on a diet of junk food and never be at risk of scurvy these days. If a junk
food diet s your jam, I recommend a multivitamin.
