I just started taking an online course for General and Extra. Can you point me to the equipment I will need once I get out of GMRS to HAM-BONE?

Usually, packet radio is used on the lower end of 2 meter VHF (144-145 mhz).

Take a look at FBB; it's a modern open-source packet radio software package. https://www.f6fbb.org/

I have been following this thread because I'm thinking about getting back
into running a BBS (I used to run one for a friend about 30 years ago),
and I'd like to have it available for packet radio use. I've been an AE
since about 2018 and I'm looking at different things I want to do with it.

The Extra tesat is not easy but it's worth it (I'm an Extra class
    m'self).

I totally agree. It's not a race, but having the Extra privileges (no pun intended) is totally worth the effort.

It shouldn't be too hard to do it. I did an experimental test with FBB on my own BBS (running MBSE under Slackware Linux). I simply had the user telnet into FBB from my BBS (the user did have a special on their account saying
they were a licensed ham radio operator) and it worked great.

If I was to do that full-time, I'd want to see a copy of their license first before I gave them access.

It's also nice when you want to work DX when there's contests going on plus
you can work DX that you couldn't if you hold a lower-class ticket. I got
my Extra because I could; no other real reason. I'm also a VE so it's nice
I can proctor all the license tests.

I especially like digital modes for DX though I love to ragchew.
