    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Lemon-Capered Pork Tenderloin
    Categories: Pork, Vegetables, Citrus, Herbs
    Yield: 8 servings

    1 1/2 lb Boneless pork tenderloin
    1 tb Crushed capers
    1 ts Dried rosemary leaves;
    - crushed
    1/8 ts Black pepper
    1 c Water
    1/4 c Lemon juice

    Set oven @ 350ºF/175ºC.

    Trim fat from tenderloin; discard. Set tenderloin aside.

    Combine capers, rosemary, and black pepper in small
    bowl. Rub mixture over tenderloin. Place tenderloin in
    shallow roasting pan. Pour water and lemon juice over
    tenderloin.

    Bake, uncovered, about 20 minutes. Remove from oven;
    cover with foil. Allow to stand 10 minutes. Cut evenly
    into 8 slices before serving. Garnish as desired.

    Yield: 8 servings
