Title: Mediterranean Sandwiches

Cooking spray
1 1/4 lb Chicken tenders; halved
- crosswise
1 lg Tomato; in bite-size pieces
1/2 sm Cucumber; halved lengthwise,
- seeded, sliced
1/2 c Sweet onion slices
2 tb Cider vinegar
1 tb Oil
3 ts Minced fresh oregano leaves

1/2 ts Dried oregano
2 ts Minced fresh mint leaves

1/4 ts Dried mint
1/4 ts Salt
6 (6") whole-wheat pita bread
- rounds; halved crosswise
12 Lettuce leaves (opt)
Spray large nonstick skillet with cooking spray; heat
over medium heat. Add chicken; cook and stir 7 to 10,
minutes or until browned and cooked through. Let stand 5
to 10 minutes to cool slightly.
Combine chicken, tomato, cucumber, and onion in medium
bowl. Add vinegar, oil, oregano, mint, and salt; toss to
coat.
Place 1 lettuce leaf in each pita bread half, if
desired. Divide chicken mixture evenly among pita bread
halves
Yield: 6 servings
