Title: Chicken Barley Soup

Yield: 8 servings
1 ts Olive oil
3/4 c Chopped onion
3/4 c Chopped carrot
3/4 c Chopped celery
8 oz Sliced mushrooms
2 cl Garlic; minced
1/4 ts Black pepper
1/2 c Uncooked quick-cooking
- barley
1/4 ts Dried thyme
4 c Chicken broth
1 c Chopped cooked chicken
1 Bay leaf
Juice of 1 lemon
Parsley (opt)
Place oil in Dutch oven. Add onion, carrot, celery,
mushrooms and garlic. Cook over medium-high heat 5
minutes.
Add pepper, barley, thyme, broth, chicken and bay leaf.
Bring to a boil; reduce heat, cover and simmer 25
minutes, or until vegetables are tender.
Remove and discard bay leaf. Stir in lemon juice and
sprinkle with parsley, if desired.
Yield: 8 servings
Serving size: 1 cup
