    Title: Kholodnyk (Uncooked Chilled Soup)

    Yield: 1 Batch

    1 qt Sour milk or buttermilk
    1/2 c Sour cream
    1 c Beets; cooked; diced
    1 c Cucumber; diced
    1 tb Raw carrot; grated
    1 tb Green onion; chopped
    1 tb Green dill; chopped
    2 Eggs;
    - up to 3, hard cooked,
    - chopped
    Salt & pepper

    Chilled vegetable soups made with a base of sour milk and cream or
    chicken broth and cream are popular summer soups in a number of
    European countries.

    Beat the sour milk or buttermilk with the cream until uniformly
    blended. Add the remaining ingredients and season to taste with salt
    & pepper. Chill thoroughly. Serve very cold in chilled soup plates.
