Title: Quinoa Lentil Patties

Yield: 16 Burgers
1 tb Olive oil
1 sm Carrot; shredded
1 Celery rib;
- trimmed, chopped fine
2 cl Garlic; minced
1/2 c Onion; minced
1 ts Ground fennel
1 ts Ground coriander
1 ts Dried thyme leaf
1/2 ts Paprika
2 tb Corn starch
1/3 c Nuts or seeds;
- grind in a spice grinder,
- blender or
- mini-food processor
2 c Cooked quinoa
1 1/2 c Cooked brown lentils;
- well drained
1 tb White miso,
- Braggs liquid aminos or
- soy sauce
2 tb Nutritional yeast flakes
1/4 c Fresh parsley, dill,
- cilantro, or basil;
- minced
Pepper & salt; to taste
Total time: 50 minutes
Add lentils to a sieve and set aside to drain. Stir to hurry things
along.
Combine starch, ground nuts or seeds, and nutritional yeast. Set
aside.
Heat olive oil in a frying pan on medium heat.
Add shredded carrot, chopped celery, garlic, onion, saute for 5 to
10 minutes, until soft.
Add spices, saute for 1 minute. Remove pan from heat.
Add to the bowl. Stir fried vegetables, quinoa, and lentils, miso or
Braggs or soy sauce, parsley or other fresh herb, salt & pepper as
needed.
Stir and form the mixture into a ball, adding pepper & salt to taste
as needed.
The dough should be stiff enough to hold a shape when formed. If not,
add 1 to 2 tb flour.
Heat frying pan on medium with small amount of oil to fry patties.
Divide the patty dough into 16 balls and flatten into 1/2" patties.
Fry in oil 10 minutes each side until well browned. Press the patties
down gently with a spatula to flatten them.
Per 74 g serving: 106 cal, 16 g carbs, 3 g fat (25% CFF), 55 mg
sodium, 1 g sugars, 4 g fiber, 5 g protein, low Cholesterol,
