Three Fruit Chutney

Title: Three Fruit Chutney

Yield: 3 Cups
1 lb Granny Smith apples;
- peeled, cored, chopped
1 lb Ripe pears; peeled;
- cored, chopped
1 c Dried apricots; chopped
1 sm Onion; minced
1 sm Fresh hot red chile;
- seeded, minced
3/4 c Natural sugar
3/4 c Cider vinegar
2 tb Fresh ginger; minced
1 tb Lemon zest; grated
1 ts Ground cinnamon
1/2 ts Ground allspice
1/2 ts Salt
Place all of the ingredients in a large saucepan over medium heat and
bring to a boil, stirring occasionally. Reduce the heat to low and
simmer until the mixture is very thick, stirring frequently toward
the end of the cooking time to prevent burning, about 45 minutes.
Let cool to room temperature, then refrigerate in a tightly sealed
container (a glass jar is best) until ready to serve. This chutney
will keep for several weeks in the refrigerator. Bring to room
temperature before serving for the best flavor.
